Asado Gaucho is preparing to bring Argentine barbecue to downtown San Diego, at 789 West Harbor Dr. The restaurant is listed as “Coming Soon” on The Headquarters’ website.
Asado Gaucho introduces diners to the traditions of Argentine asado, a style of cooking in which quality meats are grilled slowly over an open flame. Inspired by the gauchos of the Argentine Pampas, the concept centers on traditional cooking techniques, bold flavors and the experience of gathering around a meal.
What Now San Diego reached out to owner Andrés Villasuso, who confirmed that the opening is targeted for April 2027 as the property undergoes a major renovation.
The menu features grilled cuts of meat, signature chimichurri and other classic Argentine dishes. Villasuso said the restaurant chose The Headquarters because of its potential as a dining destination.
“We truly believe in the vision for the property and its potential,” he said. Villasuso also described the location as a natural next step for the restaurant, citing its central setting, distinctive atmosphere and mix of local residents and visitors.
The owner also credited the San Diego community’s support as a key factor in the restaurant’s expansion, noting that customers have helped spread the word by recommending the food to friends and family and returning for repeat visits.
“As a locally owned business, that support means everything to us,” Villasuso told What Now San Diego. “Every new location is possible because of the people who believe in what we do, and we’re incredibly grateful for that.”
With the upcoming opening, Asado Gaucho aims to reach new customers and share Argentine culinary traditions with more of San Diego.
“We’re excited to keep growing, reaching new communities, and sharing a little piece of Argentina with San Diego,” Villasuso told What Now San Diego.
