Forgotten Bakery, the South Sacramento shop known for hand-rolled bagels and Chilean-style empanadas, is coming to Midtown, at 2107 L St. The second location is being built by owners Robby Naim and Paul Dollar, who have invited supporters to help get the new shop off the ground.
The bakery’s first location is at 4650 Stockton Blvd., in a renovated building that had been vacant for more than a decade. Naim and Dollar, who are life and business partners, built the menu around the family recipes each of them grew up with. Naim, a Sacramento native, learned bagel-making from his father, who ran a Bay Area bakery for about 20 years. Dollar, who has Chilean roots, has been making empanadas his whole life.
Every bagel is beer-fermented overnight, hand-rolled, boiled in honey water and baked fresh each morning. Flavors rotate, with options like jalapeño cheddar and za’atar, and the Forgotten Bagel comes with chive cream cheese, bacon and jalapeño. The empanadas are hand-folded in savory and sweet varieties, including beef, spinach and cheese, and guava cream cheese. Dollar’s favorite is the Chilean beef empanada with onions, olives, raisins and hard-boiled egg.
The bakery has won a following, its website says it was voted Best Bagel in Sacramento. The Midtown expansion was a goal from the start. When the partners were preparing the first shop in 2023, Naim said he hoped to open a second location once the Stockton Boulevard shop was running. To help fund the new shop, the bakery is selling Founding gift cards at 25% off, such as $75 for a $100 value.
