Pinsa Fire: Ancient Roman Style Pizza is planning to open a restaurant in Leesburg, according to building permit records filed with the state. The pinsaria is preparing to open at 404 W. Main St., and Thomas Cerra is listed as the owner and operator. No opening date has been announced.
Pinsa Fire already operates in Clermont, at 793 W. Montrose St., where it serves what it calls authentic, artisanal pinsa. The Leesburg location would extend the concept to another city in Lake County.
Pinsa is an oval, Roman-style flatbread that’s often described as a lighter alternative to pizza. The dough is made from a blend of wheat, soy and rice flours with sourdough, and it’s known for air pockets that give it a crisp outside and a soft, airy inside. Pinsa Fire builds each pie on a hand-pressed crust from Pedone Pinsa.
The Clermont menu gives a sense of what to expect. The classics include Margherita, pepperoni, meatball, DiaVola and Carnivore. Signature pinsas include guava and cheese, fig and prosciutto, a Cubano and lemon pesto chicken. Guests can also build their own with sauces such as tomato, pesto and dijonnaise, meats such as Calabrese salami and prosciutto, and vegetables such as zucchini and pineapple.
