Los Cucos to Expand to Second Location

Houston-based Mexican restaurant will serve sizzling fajitas and margaritas in Summerlin

With its original Las Vegas outpost in Spring Valley, Los Cucos will add a second restaurant near Summerlin.

Since its 1992 conception, the Houston-based, family-owned restaurant has been serving authentic Mexican cuisine across Texas. Los Cucos offers a delicious menu of classic Mexican dishes such as taquitos, tomatillo enchilladas, and sizzling fajitas made with beef, chicken, shrimp or mixed and sautéed with onions, tomatoes and bell peppers.

Los Cucos will settle into the 6,672-square-foot vacancy at 1121 S Fort Apache Road, which had formerly belonged to the casual breakfast and brunch stop Mimi’s Cafe.

Although an official opening date has not yet been announced, Eater Las Vegas reports that “construction permits note no further structural improvements and hint that the new restaurant might open within the next six months.”
