The restaurant demonstrated satisfactory compliance with the food code during yesterday’s inspection and, hence, was able to retain its permit.

Hibachi Buffet underwent the follow-up inspection between 11 AM and 12 Noon on Thursday, April 10. The report cited two new violations at the restaurant during yesterday’s inspection. All the issues that were reported during the previous routine inspection had been resolved.
The first new violation that was reported was in the case of an employee who did not wash hands after using the restroom and before entering the kitchen and touching clean utensils. As a corrective action, the Employee washed their hands, and the utensils were sanitized.
Marking a second violation, three chlorine sanitizer buckets were seen without labels. The Person in Charge (PIC) added labels to the buckets as a corrective measure.
Further, the inspection report noted that all cold/hot holding complies. The restaurant shall also face a required additional routine inspection within 12 months, which will ensure compliance.

Hibachi Buffet had received a permit suspension due to three consecutive violations in the case of time control for sushi and two consecutive unsatisfactory inspection scores. The permit was reinstated after onsite training was completed.
During the routine health inspection, multiple food safety violations were observed at the establishment. The PIC’s lack of managerial control and food safety knowledge were the first violations reported. Improper cold holding and cooling practices, and failure to follow time control procedures for sushi and other items were also noted.
Some foods were found stored above safe temperatures; others were left out too long or cooled improperly. Additionally, employees lacked the required health reporting forms, and the facility had recurring problems with cleanliness, such as buildup in the ice machine and improper utensil storage.
Hibachi Buffet will have to be careful to strictly adhere to the food code from here on out to avoid unsatisfactory scores and permit suspensions. The restaurant will have to be particularly careful not to have repeat violations in future inspections, as this may lead to dire consequences.
