The restaurant was able to score the maximum 100 points and get the “A” grade as it demonstrated excellent compliance with the health code.

Inspectors who visited Wasabi & Sushi for the follow-up inspection on Monday, March 24, did not find any violations of the food code at the restaurant. Not only that, they found that all the violations that were reported during the failed inspection were also corrected. As this was the case, the restaurant earned the perfect score and the top grade.

The additional comments in the inspection report stated that all cold and hot-held temperatures complied. It also noted that additives are not being used at the facility. The report also noted that thermometers were calibrated on the day of inspection.

Further, the restaurant will undergo a required follow-up routine that will be conducted within 12 months. This inspection will be important for the restaurant, as unsatisfactory scores and/or repeat violations may cause its permit to be suspended.

Key issues that were reported during the inspection included the absence of active managerial control, improper handling of ready-to-eat sushi with bare hands, and open employee drinks stored in food prep areas. Inspectors had found kimchi prepared at home, leading to its disposal. Cross-contamination was observed as raw and cooked sushi was prepared on the same surface. 

The report also noted temperature violations which included lettuce and cabbage stored above 41°F and shrimp tempura improperly cooled at room temperature. The PIC was found using improper cooling methods. Other violations cited in the report included the reuse of single-use containers for sauce and storage shelves that had accumulated dirt and debris. 

Corrective actions were taken during the inspection under the supervision of the inspectors. Unsafe food was discarded, staff were educated on food safety practices, and contaminated areas were cleaned.
