Cuantos Tacos, the Michelin Bib Gourmand taco truck from chef Luis “Beto” Robledo, is preparing to open its first brick-and-mortar restaurant at 808 Justin Lane in North Austin, with an opening expected in early 2027. The move takes the Mexico City-style taqueria out of the yellow trailer where it has operated for seven years.
Robledo launched the truck in 2019 at 1108 E. 12th St., after a 2018 trip to Mexico City where he studied tacos at stalls around the city and set out to recreate their flavors in Austin. A native Austinite, he trained at Le Cordon Bleu and interned at Uchiko, and his cooking blends Japanese knife work, French technique and Mexican family traditions.
The truck’s menu has stayed deliberately short, with tacos filled with longaniza, cachete, buche, suadero, carnitas and mushrooms, served simply with onion and cilantro on thin, house-made nixtamalized corn tortillas. Quesadillas on flour tortillas and grilled onions round out the offering, and it has been praised in Texas Monthly and The Infatuation.
The Michelin Guide awarded the truck a Bib Gourmand in 2024, a designation for good quality and good value cooking. Its inspectors described the tortillas as small, pliable and full of flavor. The north area of downtown has drawn a growing number of independent restaurants in recent years, and a Bib Gourmand-recognized name would add a draw for the neighborhood.
