The team behind Blue Square Pizza is adding a new concept to its lineup, this time trading pizza for smashburgers.
Troy Sproul, founder and CEO at Blue Square, is preparing to open Lacy Burger at 42 Main Street in Hopkinton, just behind the original Blue Square Pizza location. In recent Instagram posts, the business shared news of the upcoming eatery, with Sproul confirming to What Now Boston that the team is targeting an opening before the end of November 2026.
The name Lacy Burger refers to the crispy, lacy edges that form when a thin beef patty is smashed onto a hot griddle, the result being a deeply caramelized crust with plenty of crunch.
“We wanted to bring the same commitment to simplicity and doing one thing exceptionally well that defines Blue Square to the art of making a great burger,” Sproul said. “This concept is super focused, tech-forward, and very streamlined.”
The menu is intentionally tight, said Sproul, with just three signature burgers. The house specialty, The Lacy, features paper-thin onions smashed directly into the patty, along with cheese, pickles, and Lacy sauce. The Classic keeps things simple with pickles, diced onions, ketchup, and mustard, while The Lacy-O combines caramelized onions, thinly sliced jalapeños, cheese, and mustard.
Each burger will be available as a single or double, with hand-cut shoestring fries on the side. The fries are double-fried in beef tallow, and bottled Mexican colas will also be available.
Lacy Burger will also feature a classic arcade cabinet, bringing a little extra fun to the space. As Sproul put it, the goal is to create a welcoming spot for locals and visitors to gather. “We want it to be a fun hangout for families and the after-school crowd,” he said.
Once it opens this fall, Lacy Burger plans to operate from 11 a.m. to 8 p.m. For updates on the opening and a first look at the menu, follow @LacyBurgerMA on Instagram.
