Owner of Jane, Wren Bistros to Open New Concept in Hilton Head Island

Permits show plans for a new restaurant called Madre Mercado at the location of a former Bonefish Grill.

A new restaurant is headed to Hilton Head with ties an established local restauranteur.

Construction permits have been filed for the upfit of the former Bonefish Grill location at the Fresh Market Shoppes on William Hilton Pkwy. According to those documents, the name of the forthcoming restaurant is Madre Mercado. Renovations will include new flooring, lighting, interior redesign, and an updated bar area.

Anne Sergent, who also owns the popular Jane Bistro in Hilton Head and Wren Bistro in Beaufort, is behind the new concept, an associate confirmed to What Now Charleston.

Sergent’s existing restaurants are well lit, modern aesthetic, and menus featuring traditional and novel food selections. They serve Southern and French-inspired cuisine including tomato basil bisque, lemony chicken salad, crispy fried flounder, southern coconut cake, and classic shrimp and grits.

Bloomin’ Brands, owner of Bonefish Grill restaurant concept, announced in June 2020 they were permanently closing their location at Fresh Market Shoppes as part of a national reduction in locations. The Fresh Market-anchored long retail center also includes Dollar Tree, Spectrum Paints, Gruby’s New York Deli, and Lulu Kitchen.

No timeline has been announced for the opening of Madre Mercado.
