Biscuit Belly is preparing to convert an existing Maple Street Biscuit Company restaurant in Concord at 8921 Christenbury Pkwy, with the transition expected in late fall 2026.
Lauren Coulter, co-founder and Chief Biscuit Eater of Biscuit Belly, confirmed this to WhatNow Charlotte. The address is listed by Biscuit Belly among the Maple Street restaurants acquired as part of its expansion.
The Concord restaurant is part of Biscuit Belly’s acquisition of 35 Maple Street Biscuit Company locations from Cracker Barrel. Biscuit Belly said the acquired restaurants will transition to its brand over an 18- to 24-month period, allowing the company to expand through existing restaurant footprints and established teams.
According to Coulter’s confirmation to WhatNow Charlotte, Concord will be the first true Maple Street-to-Biscuit Belly conversion in North Carolina. Biscuit Belly already has North Carolina restaurants, including locations in Fayetteville, while the company’s location directory also identifies Concord among the restaurants associated with the brand’s expansion.
Biscuit Belly’s website describes its concept as a Southern breakfast and brunch restaurant built around biscuits and creative takes on familiar breakfast dishes. The company’s menu includes biscuit sandwiches such as The Rockwell, The Rockwell Supreme, Belly Buster, The G.O.A.T., Biscuit Bennie, Edgy Veggie, The Boozy Bird and Basic Biscuit.
The menu extends beyond biscuit sandwiches with items including Bonuts, Gravy Train, Loaded Breakfast Tots, Fried Green Tomatoes, Pancake Corndogs, Avocado Toastie, French-style biscuit toast, pancakes and a Yogurt & Berries Bowl. The restaurant also offers breakfast cocktails such as mimosas, Tequila Sunrise, Espresso Martinis, Old Fashioneds and a Dark and Spicy Mary.
The company said the Maple Street acquisition will more than triple its footprint and create a path toward more than 60 units by the end of 2028.
The Maple Street conversion strategy also allows Biscuit Belly to enter markets using existing restaurant infrastructure and teams. The company said the selected locations were chosen based on their geography, restaurant footprints, established teams and the communities they serve, while acquired restaurants are not planned to close because of the transaction.
For Concord, the conversion will introduce Biscuit Belly’s brunch-focused concept into an existing restaurant rather than bringing a newly constructed location to the market. With Coulter confirming a late-fall target for the Concord transition, the restaurant is positioned to become the first North Carolina Maple Street location to make the move to Biscuit Belly.
