A restaurant specializing in Korean rice rolls with protein is opening in The Loop next month.
Staff of 82 Kimbap are teasing their restaurant coming to 125 S Clark Street. The concept has been operating various pop-ops around the city and will have a location at the Sterling Food Hall. Owner Jin Tek Jung is hoping to open on Nov. 3.
Jung recently quit his consulting job to pursue the business full-time. Erika Park, in charge of branding for the restaurant, explained in a recent Instagram post it is meant to be a space to represent Korean Americans. Park and Jung are working on advertising the restaurant through creating merchandise.
Regarding the food, the team is currently testing recipes including their signature “round egg” with flavors packed into rice rolls. Sauces and other recipes are being worked on, and will debut during the restaurant’s full opening. At previous pop-ups including the most recent one at Mochinut on Sept. 14, their new rolls proved to be a hit.
“It’s going to be a lot of fun but a lot of work,” Jung said in the post.
As of Sept. 29, the business was hiring for various positions. It will join concepts like Hot Chi Chicken, LaShuk Street Food and Seedo’s Levantine Bakery.
