Blue Sushi Sake Grill Will Be the Second Restaurant to Open in the Former Sullivan’s Space

According to Chicago Food Chat, alongside Ghost Donkey, Blue Sushi Sake Grill will open at the former Sullivan’s space at 415 N Dearborn Street.

A representative of Blue Sushi Sake Grill was not immediately available for commentary upon What Now Chicago’s request.

While an official opening date has yet to be confirmed, behind Blue Sushi and Ghost Donkey is Flagship Restaurant Group.

Flagship’s company website describes Blue Sushi Sake Grill as “Uniting creative, bold, and sustainably sourced ingredients with positive vibes and happy moments for a fresh take on the sushi experience.”

“Blue Sushi Sake Grill is founded on the belief that sushi can, and should be fresh, creative, and fun. At Blue, we believe in uniting bold and inventive ingredients to create a memorable dining adventure. Each visit should fuel good energy and great conversation.”

Blue Sushi’s website has a “conscious earth” section, stating, “We’re making better-informed decisions on how we source our seafood and meats. Conscious Earth is more than a program with an oath for sustainable practices, it’s our commitment to responsibly sourcing our seafood and respecting our Earth’s ecosystems, by land and sea.”

“Blue Sushi Sake Grill is committed to following the recommendations of the Monterey Bay Aquarium Seafood Watch® Program by prioritizing fisheries or aquaculture operations that are rated a Green Best Choice, Yellow Good Alternative, or that from eco-certified sources recognized by Seafood Watch.”
