The newest Bluefish location is swimming upstream to Schaumburg next month.
It was recently reported by The Daily Herald that Blufish Sushi will be opening next month at 1530 McConnor Parkway, taking over the former Jason’s Deli. This will be the company’s fourth Illinois location. Other locations in the Chicago area are in Vernon Hills, Glenview and Park Ridge.
Blufish is known for their flights of sushi, with California rolls, salmon, vegetable and tuna rolls. The company also does catering for special events, and gives the option to order online.
“At Blufish we know that sushi is not only food. Sushi is an experience,” says the description on their website.
On their website, the business is listed as “coming soon.” They are also hiring for various positions. Co-Owner Chul Choi told the Village of Schaumburg the company was originally aiming to open in November, but now that they are well into construction August seems more realistic.
The building will have an outdoor patio. It is situated near the W McConnor Parkway and N Meacham Road intersection, which is a commercial area of Schaumburg near Woodfield Mall. The last expansion from the company happened in 2021 when the Park Ridge location opened at 550 W Touhy Avenue.
