The breakfast restaurant with locations all around the country is heading to the northern suburb.

It was reported by Evanston Roundtable that Yolk is taking over the former Edzo’s Burger Shop space at 1571 Sherman Avenue. The company already has an Illinois presence, and this will be their first Evanston location. It is currently under construction.

It was announced in December 2024 that Edzo’s would be closing after 15 years on Sherman Avenue. This was due to a lack of customers in the area, and Yolk owner Taki Kastanis later found the location. What Now Chicago has reached out to Kastanis for comment on the new restaurant.

Yolk first opened by Kastanis in South Loop in 2006, and he now has locations in Illinois, Indiana, Florida and Texas. The restaurants have brunch menus and a coffee bar, with breakfast options like french toast, pancakes and eggs benedict. His company has received praise from media in the past, including recognition as the “Best Breakfast” in 2008 from Citysearch.com.

Trattoria Demi, an Italian spot, is also at this address. Close-by are TEAlicious BUBBLE, Potbelly Sandwich across the street and Aloha Poke Co. This is a few blocks east of the Davis CTA Purple Line Station.

The company has not yet listed an Evanston location on their website. This is set to be their sixth Illinois restaurant.
