CheSa’s Bistro & Bar to Open on W. Addison St

Chef Chesaree Rollins has filed a liquor license application for a new eatery.

Joining other new Avondale eateries, will be CheSa’s Bistro & Bar, slated to open at 3235 W. Addison Avenue, Suite C, according to a liquor license application filed with the City of Chicago. The application names Chef Chesaree Rollins of Southern Twang and CheSa’s Gluten Free Gourmet as the owner of the eatery.

Chef Rollins is gluten free herself, and part of the motivation behind opening CheSa’s Gluten Free Gourmet came from the struggle to find suitable dining out options. “It was a struggle dining out and seeing my foodie favorites angelically float by my table,” Rollins shares on social media. After attending a food truck festival, Rollins opted to take matters into her own hands. “A few months later—out of hunger—the idea was born. Someone needs to create a gluten free food truck.”

CheSa’s Gourmet Food Truck can be found around town serving an array of dishes from the All Hale Kale salad to beef skewers, Flamingo Chicken, and veggie tacos. Southern Twang has been providing a ‘Soul Cajun Experience’ through catering ever since the eatery’s original location closed down in July. A social media post announcing closure shares Southern Twang will likely find a new home for a dine-in experience.

No word yet on when CheSa’s Bistro & Bar will open, but you can keep an eye on Chef Rollins’ website for all the updates you need.
