Hawksmoor Expands With New Beef & Liberty Bar
Hawksmoor Chicago, located in the historic LaSalle Street Cable Car Powerhouse, is launching a Beef & Liberty Bar. The bar inspired by ‘London in the late ’90s and early ’00s’ is set to open on September 19. The new Chicago cocktail bar will channel the late-night basement party vibes of Soho, London.
The restaurant, a beloved, high-end steakhouse, serves high-quality beef and seafood. Hawksmoor gained traction among the Chicago locals with its dynamic, sophisticated, and comfortable space that celebrates Chicago’s history.
The interior of the LaSalle Street Cable Car Powerhouse was entirely restored, preserving its vintage barrel-vaulted ceilings and timber joists. The restaurant spans three floors and offers five private rooms for events, accommodating everything from intimate dinners to large corporate gatherings.
The restored historic setting complements Beef & Liberty Bar’s ’90s London theme.
A “Very London” Bar Menu and Vibes at Hawksmoor
Beef & Liberty Bar’s menu draws on ’90s London, featuring Hawksmoor’s signature Sub-Zero Martinis and new Duke’s Martinis. A specialized selection of cocktails is also offered that celebrates the “Naughty Aughties” golden age of London bars, from 1995 to 2005.
Bar Director Liam Davy stated, “This menu takes its cue from the cocktail renaissance that swept through London in the late ’90s and early ’00s. It was glamorous, but with real London swagger. Rockstars, supermodels, gangsters, and geezers, side-by-side in dark Soho basements sipping new drinks, many of which have become modern classics.”
“The cocktail list is a love letter to Soho basements, loud music, and late nights,” added Davy, “and to a time when ordering a proper martini in London felt like a swaggery act of defiance, and the start of something delicious and new.”
The new food menu includes some of the classics from the golden-age-London, including British bar snacks, Scotch Eggs with smoked apple ketchup, Welsh Rarebit, Chop House Hash Browns fried in beef dripping, and the iconic Yorkshire Sloppy Joes.

- Dick Bradsell’s ‘Ello Treacle – a rum-spiked Old Fashioned.
- Salvatore Calabrese’s Breakfast Martini – infused with orange marmalade.
- Silk Stockings – a playful, dessert-like cocktail made with Cocoa Puff cream.
- Duke’s Martinis – Hawksmoor’s first-ever, served at -2°F in insulated flasks, limited to two per guest.
- Hawksmoor’s Ultimate Martini – classic and refined.
- Rotating martini variations – including the Pink Gibson and Bangkok’s Vesper Martini.
The menu also includes the viral Notorious B.E.E.F. Burger, Filet Steak Sliders with bone marrow onions and Marmite hollandaise, and skewered Chateaubriand bites grilled over live-fire charcoal.
With its nostalgic menu and historic setting, Beef & Liberty Bar is set to become a new late-night destination in Chicago.
