A fast-casual Korean restaurant is adding several restaurants to the Chicago market.
SeoulSpice is planning new locations in River North at 619 N. State Street and in Wicker Park at 1480 N. Milwaukee Avenue, according to Eater Chicago.
The additional locations follow the opening of the concept’s first restaurant in Chicago, which recently opened at 20 N. Michigan Avenue. This is SeoulSpice’s first location outside Washington D.C.
The SeoulSpice menu features signature and customizable bowls with a base (rice, noodles, salad), proteins (beef, chicken, pork and tofu), a variety of veggies, sauces like creamy sriracha and cilantro lime-ranch, and toppings like crispy garlic and roasted seaweed.
SeoulSpice was founded by Eric Shin, inspired to share healthy family recipes. The first location opened in 2016. There are now several locations across Washington, D.C., Virginia and Maryland and Illinois. The brand has been supported by an investment from Invus Group, which helped fellow fast-casual chain CAVA grow with a partnership beginning in 2015.
In addition to his culinary passions, Shin is also a musician. He studied at the Cleveland Institute of Music in Ohio, then later the Juilliard School. He was appointed principal percussionist of the National Symphony Orchestra in 2012 and previously played with the Chicago Symphony.
The River North and Wicker Park locations of SeoulSpice are listed as “coming soon” on the company website.
Until then, you can find SeoulSpice at at 20 N. Michigan Avenue from 10:45 a.m. to 10 p.m. daily. It is located right across the street from Cloud Gate in Millennium Park.
