A new era of dining is coming to the North Shore this April with the opening of Deere Park, a new restaurant concept set to occupy the space currently home to Greenwood at 200 Green Bay Rd. in Highwood.
Led by Josh Kaplan—owner of Greenwood—and Chef Todd Stein, Deere Park promises to bring a stylish new American brasserie to the area while maintaining the warm hospitality and attention to detail.
Kaplan says in a statement, “With Todd Stein joining us as Chef/Owner, we are taking things in a new, more elevated direction. Diners on the North Shore have come to know and love Todd’s food through the Ballyhoo restaurants over the years and we’re excited to invite those guests to keep enjoying his food at Deere Park.”
Chef Todd Stein, a Highland Park native, is well-known for his refined approach to modern American cuisine, influenced by his travels through France and Italy. His extensive culinary background includes training at Kendall College in Chicago, as well as working under nationally renowned chefs Keith Korn at Gordon and Michael Kornick at mk. Stein later became Executive Chef at mk, where he helped shape the restaurant’s hospitality-driven ethos. His career continued to flourish as he led some of Chicago’s most acclaimed restaurants, including Formento’s, The Bristol, The Florentine, and Cibo Matto. Most recently, he served as Culinary Director of Ballyhoo Hospitality, where he played a pivotal role in the success of popular suburban restaurants such as Sophia Steak and Pomeroy.
At Deere Park, Chef Stein will introduce a menu that reflects his signature style—seasonal ingredients, bold flavors, and expert technique. The opening menu will feature highlights like:
Seared Tuna
Cajun Spice, Crushed Avocado, Chipotle Aioli, Crispy Shallots, Lime
Stuffed Garlic Bread
Whipped Mascarpone, Sea Salt, Fennel Pollen
Beets & Burrata Salad
Watercress, Basil, Sherry Vinaigrette, Seeded Honey
Nigiri Glazed Salmon
Sugar Snap Peas, Lime-Serrano Butter
Prime Sirloin
Porcini Rub, Whipped Potatoes, Au Poivre Sauce
Cavatappi
Basil Pesto, Stracciatella, Butter-Toasted Pine Nuts
The restaurant will be open for dinner Tuesday through Sunday, and with an expansive patio will be a popular North Shore dining destination this summer.
Happy hour and a bar menu is planned to debut later this year.
Deere Park is slated to open on April 8th. Reservations will be available beginning March 31st via Resy.
