Everdine’s Grilled Cheese Expanding to Downtown Batavia

The company will replace Hot Pan in either late spring or early summer

Everdine’s Grilled Cheese, the gourmet grilled cheese restaurant found in Naperville, is getting ready to expand to a new site in Batavia at 227 W. Wilson St.

The company’s second location will move into the former home of Hot Pan in either late spring or early summer, according to the Daily Herald. Co-owners Brian and Kelly Herkert currently operate from its original site on Jefferson Street in Naperville, which opened back in 2016. Now that the couple has survived the pandemic, they are ready to open a second location in a bustling shopping district that is full of other restaurants, and next to the Batavia United Methodist Church.

The Herkerts named the restaurant after their daughter, and it has taken Naperville by storm since opening. The couple dreamed of opening a restaurant after their daughter’s birth and slowly began experimenting with different grilled cheeses and soups. Both having experience in the food industry and wanting to one day own a restaurant, they decided to take the next step and open Everdine’s. Now the two are getting ready to open a second location in the heart of Downtown Batavia.

When the new Everdine’s Grilled Cheese opens later this year, customers can expect different kinds of handcrafted grilled cheese. An example of the extensive sandwiches is the turkey meltdown, which includes cheddar, swiss, Boar’s Head turkey, crispy bacon, tomato, and chipotle mayo on texas toast. For those who have trouble deciding on toppings, the restaurant offers a build-your-own option. There’s also plenty of soups, salads, and sides to complement each sandwich.
