Fast-Casual Italian Restaurant Planned for Chicago

A new fast-casual Italian restaurant is coming to Chicago.

Pasta Via is planned for Fulton Market at 179 N Morgan Street. The space was formerly occupied by Molly’s Cupcakes.

The concept aims to provide customers with customizable pasta bowls for under $15 in under 5 minutes, combining “Italy’s timeless culinary traditions with the fast-paced lifestyle of Chicago.” Visitors will be able to select their preferences for pasta, sauce, proteins and toppings. Pasta Via also plans to serve savory Italian turnovers called panzerotti.

The concept comes from Gino Bartucci Jr., the owner of Gino & Marty’s. According to the Pasta Via website, the pasta will be crafted daily from just two ingredients by Bartucci’s family business, Pasta Fresh, to ensure it’s free from preservatives and processed additives. The menu will also feature organic produce whenever possible, vegan and gluten-free options, and no seed oils.

Several additional locations are in mind for Pasta Via over the next few years, according to Block Club Chicago. Possible areas: Oak Brook, the Gold Coast, Old Town, Lincoln Park and Logan Square.
