Sellers of bread at the Evanson Farmers’ Market are bringing their own bakery to Noyes Street by early fall.
It was recently reported by The Daily Northwestern that Fred’s Bread Bakery & Cafe will be opening at 817 Noyes Street in place of Good News Laundromat. This will be opening around September, according to co-owner Frederic Bressand. The current menu has baguettes, sourdough bread, ham & cheese croissants and many other baked goods.
Frederic owns the business with his wife Kate, and they have been working on starting their own cafe for over 10 years. Frederic told What Now Chicago the space will serve breakfast and lunch, and later transition to dinner. There will be around 36 seats inside.
“The community has been very supportive,” Frederic said.
Before the farmers’ markets, Frederic started working in a kitchen, and was inspired by the chefs using their hands to craft bread. Baguettes are his main specialty, and he was inspired to share his breads with the community and down the line apply for permanent space.
The owners have been regularly showcasing their baked goods at the Evanston Farmers’ Market every Saturday morning. According to the article from The Daily Northwestern, farmers’ market manager Katherine Horwitz Martinez is sad to see the two leave but is also excited to see what this new project brings to the community.
