Matt Eisler Plans New Restaurant Concept For Fulton Market

Chicago’s Fulton Market is one of the fastest-growing developments in the city, and now an exciting new restaurant will be moving into the former warehouse district.

Matt Eisler is the co-owner of Heisler Hospitality. Working alongside his business partner Kevin Heisner, the two have brought to life some of Chicago’s most intriguing and unconventional restaurant concepts, including recognizable spots like Nights & Weekends, Pizza Lobo, Estero, Lone Wolf, Sportsman’s Club, and Revel Room. Begun in 2006, Heisler has grown to become one of the most prominent hospitality companies operating in the city today.

Matt began his career as an MVP with the Calgary Flames after studying business at University of Notre Dame, before finally joining up with Kevin to create Heisler. In 2009, Matt was even listed in Crain’s Chicago Business’s prestigious “40 under 40” list, thanks to his eye for opportunity and unique take on hospitality.

Now, it appears that Matt is planning on debuting a brand new restaurant concept in Fulton Market. Moving into the new development at 1001 W Fulton Market, Matt has just filed for the permits to build out the first floor and basement for his new project. While Matt could not be reached for further comment, the project is still in its infancy and has yet to be named.

Fulton Market currently houses a slew of some of Chicago’s most recognizable restaurants, such as Duck Duck Goat, Beatrix, and Time Out Market Chicago. With such a prestigious pedigree, Matt is sure to be in good company when he finally announces his plans for opening.
