Loon chef Devin Denzer is working hard to get his new restaurant going for the community.
Denzer recently applied for a liquor license for 933 N Ashland Avenue under the name Atsumeru. This will be a new Japanese restaurant with 10-12 courses. It will offer private dining experiences.
“The menu at Atsumeru reflects childhood upbringings, as well as ingredients found in Nordic and Japanese regions,” says the description on their website.
Denzer has been the executive chef of Loon in the city since 2020. The fine dining restaurant is at 5009 N Sheridan Road in Uptown. He previously took to social media to announce his new project:
In a recent social media post, Denzer said after working at his pop-up restaurant for two years he felt it was time to seek additional help for a new location. He added he had been working with a two Michelin-starred chef which has prepared him for the new venture.
Denzer told What Now Chicago it is not yet open but is not providing an estimated date of opening. In the license, the restaurant will be on the first floor of the building on N Ashland Avenue. This is in the heart of the Noble Square neighborhood.
According to the website, the operating hours will be 5 p.m.-9 p.m. Wednesday through Saturday. Denzer has not provided additional comments at this time.
