A Mexican cuisine concept is set to be built in the city’s downtown.
Gallo Santo is the newest restaurant coming to St. Charles at 215 W Main Street. This will be a family-owned business serving Mexican cuisine along with margaritas and mezcal drinks. Co-owner Tanya Aguirre expressed her excitement for the project, and told What Now Chicago it is looking like the opening date will be in late April.
“Gallo Santo is where bold flavors, good vibes, and great company come together. Rooted in tradition and inspired by community, we serve crave-worthy taco dishes made to be shared and enjoyed. Welcome to your new favorite spot,” says the description on their Facebook page.
Aguirre along with her family are hoping to bring a menu of many options including pallomas, tacos and appetizers. Cocktails with mezcal will be added to the drink menu along with the margaritas. The business already is hosting cocktail tastings on the weekends prior to opening.
The new spot is a project that is almost two years in the making, according to Aguirre. As of recent, the city has reviewed their liquor license application for approval. Right now, the owners are waiting on permits to go through, and the interior still needs to be built.
Next to the new restaurant is Bogart’s, a popular bar with arcade games. Also nearby are bars like Broken Brix, Whiskey Bend and R House. The building was formerly REHM Electric Shop.
