New Poplar Pastries Shop To Open By End Of June

An experienced pastry chef is bringing his concept to Evanston.

It looks like a new pastry shop is coming to Evanston this summer.

According to an article from Daily Northwestern, Ian Willa and his wife Georgia are constructing their business Poplar Pastries in the former Beth’s Little Bake Shop at 1814 Central Street. This is to open at the end of June and has been in the works for months.

Willa is the owner of his self-employed business Willa Donuts in Chicago. He was also the executive pastry chef for The Elm in Bloomington, Indiana. With 20 years of experience in the culinary industry, he is no stranger to the process of starting up restaurants.

At his other businesses, he makes a range of pastries including muffins, baklava cigars, sourdough bread and of course donuts. A menu has not been released yet, but customers can expect many of these same tasty treats. In an article from Evanston RoundTable, it’s reported there will also be coffee and expresso drinks from counter and window services.

From the Daily Northwestern article, it was Georgia who saw the building and knew it would be the perfect fit for their business. Once the finishing touches are finished, it should open next month.
