Launch of Signature Steak Concept
Chicago’s South Loop is receiving a major upgrade as the freshly revamped Signature Steak opened its doors earlier this month. The venture is the brainchild of former Chicago Bear Israel Idonije, who partnered with Fabio Viviani Hospitality to overhaul SoLo as a culinary destination.
Idonije envisioned a refined yet intimate space rooted in the neighborhood and backed by standout cuisine. It opened on July 10, at 1312 S. Wabash Ave.
Idonije said, “SoLo is my home. It deserves to be a destination, not just a pass-through.” He noted that achieving his vision for SoLo required a collaborator who is not only skilled in creating meaningful experiences and community-driven concepts but also capable of executing them with accuracy. “Partnering with the FVH was the ideal next step,” added Idonije.
Israel Idonije’s Vision to Reinvent South Loop Dining
After retiring from the NFL in 2013, Idonije turned his attention to entrepreneurship, philanthropy, and creative ventures. His post-retirement ventures include launching a comic book publishing company and investing in the hospitality industry.
Idonije sees SoLo as more than a restaurant concept. He said, “This isn’t about one restaurant.” His focus is on building enduring value for the neighborhood by creating something lasting for the community.
Under the leadership of celebrity chef Fabio Viviani, Fabio Viviani Hospitality (FVH) is renowned for bringing bold culinary visions to life.
The company partners with restaurants, hotels, casinos, and resorts, providing complete services including concept creation, design, staffing, marketing, social media, and operational execution.
Offering end-to-end support, FVH is a trusted partner for hospitality ventures at every stage, from startup to scale. FVH’s Head of Corporate, John Williams, said, “We’re honored to support Israel in bringing his remarkable vision to the South Loop.”
He noted that FVH is responsible for turning Idonije’s concepts into reality and building engaging experiences that uplift the neighborhood.
Commitment to Community and Long‑Term Growth
Since early 2025, Idonije has been actively developing his vision for SoLo. He opened The Staley, a welcoming sports bar and restaurant for families, locals, and Bears fans. More concepts are in the pipeline as he aims to position SoLo as a go-to hub for dining and community experiences.
With Idonije’s vision and FVH’s operational support, SoLo is on track to experience a transformation in its culinary scene. With fresh concepts on the horizon, SoLo’s dining scene is poised for a notable transformation.
