A new Omakase concept is bringing luxury cuisine to Old Town next month.
The new restaurant will be located at 1533 N Wells Street in the Old Town neighborhood. This is a project from owner Adam Sindler whose family has a long history with the Japanese culinary scene in Chicago. According to their social media, the restaurant will be opening Aug. 12.
The chef of the new Omakase spot will be Mari Katsumura, a Michelin-starred chef with experience at restaurants including Yugen, Grace and Blackbird. This concept is the newest business venture for the experienced chef.
“Together, they’re reimagining omakase through the lens of generational craft and personal expression,” said the press release about the restaurant.
According to an article from Eater Chicago, Sindler’s family started Kamehachi which was the first sushi bar in Chicago. He then went to work with a restaurant called Roister from The Alinia Group. Needless to say, he is continuing the legacy in his own way.
The menu for the new restaurant will include luxury cuisine in the omakase style, which is a multi-course Japanese meal using fresh ingredients like greens, along with fish like sushi and salmon. Inside, there will also be a full-service bar. The official menu will be showcased during the grand opening.
According to Katsumura, there will be two phases of seating, one at 5 p.m. and the second at 8 p.m., happening every day Tuesday to Saturday. For more information on the restaurant, visit their Instagram page @sho.chicago.
