Sparrow Coffee Roastery, a craft coffee roaster that serves two-thirds of Chicago’s Michelin starred chefs, is looking to add a new location in O’Hare Airport, located at 10000 W O’Hare Ave.

The coffee shop was recently included in Mayor Lori Lightfoot’s ordinance to improve the dining and retail options in Terminal 3 and Terminal 5. Other potential eateries included in this proposal are Bar Siena, The Hampton Social, and Butcher & the Burger. The Chicago-based coffee roastery first started under Chris Chacko, who created custom roasts for over 160 restaurants. He and his team then opened the company’s first cafe in Napeprvile in early 2017. This would become the company’s second official location and would open by year-end.

Chacko has quickly become one of Chicago’s most sought-after roasters in the area’s dining scene. On top of being the provider to dozens of well-regarded chefs in Chicago, Chacko sells a selection of award-winning, whole-bean coffee available for home brew. Sparrow Coffee takes pride in serving coffee in a responsible manner. By sourcing sustainable, certified organic, and “organic by default” coffees, the company commits to the betterment of all of us. Their hybrid green coffee roaster generates no smoke, giving the roast master the ability to create extraordinary creations cleanly without pollution and an afterburner.

“One visit to our beautiful West Loop roastery in Chicago, and it is easy to see how obsessive we are about everything we do, from our sourcing to the way we cup and by doing right at our unwavering commitment to the environment,” According to their website. “With a lifetime achievement approaching 100,000 roasts, which only a handful of individuals have achieved the world over, Chris remains true to the belief that every roast is his artistic interpretation of a coffee canvas using air, temperature, and time to whet flavors hidden by Nature’s bounty.”
