Subourbon Owner Continuing to Serve Downtown Wheaton with New Concept

Eric Schlickman is not finished building up Wheaton's downtown.

The space that was once Maypole is being replaced by a new concept from the same restaurateur.

Owner of Wheaton restaurants Eric Schlickman is planning his new concept The Guild at 121 W Front Street this year. This is close to his recently opened Dough + The Backyard, a pizza spot, sports bar and event venue. According to reports, Schlickman is hoping to open by the end of 2025.

What Now Chicago previously reported on Schlickman opening Dough in May 2023. A longtime restaurant owner started out as an architect who then transitioned to dining establishments. In 2019, he opened 302 Wheaton, a burger restaurant that used to be an auto repair shop.

“An architect by training and a long-time leader in the restaurant world, Eric combined his passion for great pizza with his eye for community spaces to create something special in the heart of downtown Wheaton,” said an excerpt from Dough + The Backyard’s website.

His newest concept The Guild will be a space for dining, holding events and even book-reading, with bookcases all around. He is working with the owner of Blackberry Market in Glen Ellyn Bob Davidson. Multiple menus will be available including counter service for breakfast, lunch, and later small and shareable plates for dinner. An outdoor patio is also planned.

The Guild will open in between Tasting deVine wine bar and Graham’s Chocolates. Schlickman’s cocktail spot Subourbon Whisky, Wine, & Cocktail Bar is at the back entrance of the same building. Needless to say, he has a large presence in Wheaton’s culinary industry.
