Susu Mediterranean Concept Taking Over Former Grace and Aikana Space

The address that has hosted multiple restaurants will soon have a new Mediterranean spot.

Following the closure of a three-star Michelin restaurant, the space is being brought to life again.

Susu is the newest concept from restaurateurs Micahel Olszewski and Paul Alqas, bringing Mediterranean dishes with infused Asian flavors. The restaurant is opening inside the former Grace space at 652 W Randolph Street. The owners are anticipating an early 2026 opening.

Olszewski was involved in the opening of Grace in 2012, which became a West Loop staple until it closed in 2017. This was due to a disagreement on purchasing the space and GM Michael Muser leaving the project, per the article from Crain’s Chicago Business. Now, Olszewski is ready to start his own restaurant with a diverse menu.

According to a listing from choosechicago.com, the inside has the capacity for 100 seats, and the menu will likely be $35 and up. Chef Alexander Willis who has experience at restaurants including Industry Ales and Garde East in Massachusetts will be leading the kitchen.

The West Loop spot is near the intersection of N Desplaines Street, close to West Loop’s main drag. Their restaurant is also replacing the former Aikana Latin American concept, and it is next to the Catalyst Ranch event venue.

Alqas told What Now Chicago more information on the opening will be released in the coming months.
