According to a recent article from Chicago Eater, Bayan Ko will open its second location, Bayan Ko Diner, in Ravenswood at 1820 W Montrose Ave.
A representative of Bayan Ko Diner was not immediately available for commentary upon What Now Chicago’s request.
According to the article, Bayan Ko Diner will have its opening sometime in April. The team behind Bayan Ko is Lawrence Letrero and Raquel Quaderny.
“The husband-and-wife team is opening their second restaurant, a greasy spoon with items like a Cuban smash patty melt, lumpia, and more. The diner will also serve classic dishes from the original Bayan Ko as daily specials. That space has since morphed into a reservation-only restaurant serving a set menu.”
According to Bayan Ko’s website, “Bayan Ko restaurant features a 5-course tasting dinner menu inspired by Filipino & Cuban cuisine. A neighborhood restaurant offering a unique dining experience.”
An article from TimeOut states, “Bayan Ko—which translates to “my country”—is a culinary representation of the real-life partnership between husband-and-wife team Lawrence Letrero and Raquel Quadreny, who trace their roots to the Philippines and Cuba, respectively. Quadreny manages the front of the house, while chef Letrero retools classics from the disparate, postcolonial island nations.”
