Downtown Columbus to Get a Bold New Fusion of Art and Flavor from Rosalita

Exciting changes are coming to the Gay and High streets district, where art and dining will soon collide in a dynamic new way. A trio of art galleries, a sculpture garden, and a highly anticipated Mexican restaurant from celebrated chef Josh Dalton are set to breathe new life into the area.

Dalton, known for his acclaimed restaurants Veritas and Speck Italian Eatery, is preparing to debut Rosalita, a modern Mexican dining experience. Located in the historic Madison’s-White Haines buildings at 72-80 N. High St., the restaurant will share space with three soon-to-open galleries: Brandt Gallery, Lindsay Gallery, and Chaos Contemporary Craft. These additions are part of a major redevelopment project by Edwards Companies, designed to energize the downtown landscape.

Rosalita will offer indoor seating for 60 guests along with a vibrant patio spilling onto Pearl Street, turning a quiet alleyway into an inviting social hub. This transformation aligns with a broader initiative to revamp the streetscape, as Edwards Companies and Downtown Columbus Inc. work to make Pearl Street a more pedestrian-friendly space in the coming years.

Dalton’s inspiration for Rosalita comes from his deep appreciation for Mexican food and culture.

“I visit Mexico often, and I’ve always been drawn to its flavors, traditions, and incredible hospitality,” he said. “With Rosalita, I want to honor those roots while putting my own spin on the cuisine.”

A key highlight? Handmade tortillas crafted from scratch, emphasizing the importance of masa—the foundation of traditional Mexican cooking. The menu will also feature innovative yet approachable dishes, alongside a carefully curated cocktail program centered around tequila, mezcal, and bold Mexican flavors.

Rosalita is expected to open in the third quarter of 2025. As downtown continues to evolve into a vibrant cultural and culinary destination, this new addition is sure to be a major draw for both locals and visitors.
