Texas-based Shipley Donuts is preparing to enter the Cincinnati market through a new three-unit franchise agreement led by local franchisees Don and Kat Koetting, alongside Fred and Lisa Koetting.

According to the Cincinnati Business Journal, the family’s first location is expected to open in the first quarter of 2027, although no leases have been finalized. The Koettings are currently evaluating several sites throughout the region.

“We’re looking at areas near a lot of families,” Kat Koetting told Cincinnati Business Courier. “It’s a great family-friendly food.”

The family expects the first restaurant to open in the northwestern Cincinnati area, potentially anywhere from Norwood northward. A second location is being considered near Northern Kentucky, where the Koetting family has deep roots, while the third location has yet to be determined. The goal is to have all three locations operating by the end of 2029.

Don Koetting said he grew up in Texas, where Shipley Donuts was a staple throughout his childhood, making the expansion a personal one.

“I grew up in Texas where Shipley is a staple, something from my childhood I was very fond of,” Don Koetting told the publication. “I’ve never seen a kolache in the Cincinnati market.”

Founded in 1936 in Houston, Shipley Donuts is known for its made-fresh-daily doughnuts and its signature kolaches—a Texas-style pastry filled with ingredients such as sausage, bacon, eggs, cheese, and jalapeños. The menu also includes coffee beverages, with an expanded coffee programme expected in the future.

The Koettings said they are looking for freestanding buildings or end-cap spaces with drive-thrus in high-traffic areas near residential neighbourhoods and complementary retailers.

The initial franchise agreement covers three locations, although Don Koetting believes the Cincinnati market could support additional restaurants over time.

Founded in 1936, Shipley Donuts has grown to more than 390 company-owned and franchised locations across 13 states. The Cincinnati expansion will mark the brand’s first entry into Ohio.
