Diners may not immediately associate great Mexican food with Utah, but an expanding chain is setting out to challenge preconceived notions. Costa Vida, founded in Layton, Utah, is getting ready to do just that in the DFW, with a new location planned for Forney.

The restaurant will be bringing a taste of the coast to 11480 West US Highway 80. Costa Vida has filed paperwork with the Texas Department of Licensing and Regulation which shows that the eatery will occupy a 2,629 square foot storefront.

Bearing in mind that dates included on TDLR forms are estimates, Forney residents can expect to hear the sounds of progress on Costa Vida’s new home this summer. Work is projected to start on June 1 of this year and to wrap by October 1. With this timeline in mind, Forney foodies may be able to enjoy the concept’s fare as early as this autumn.

Costa Vida has been serving up satisfied customers since 2003. The website explains the secret to the chain’s longevity, saying: “We source the highest-quality ingredients and make our recipes from scratch every day. Our thoughtfully crafted menu items make you feel nourished and good, not ready for a siesta.”

Costa Vida invites visitors to enjoy the increasingly popular assembly line method of cobbling together a meal. The highly customizable menu includes burritos, enchiladas, tacos, quesadillas, salads, and bowls.
