According to public filings, Los Compadres Cantina, a Tex-Mex concept built around the flavors of Mexico City, is planning a new location in Ponder at 309 N. FM 156. What Now Dallas spoke with co-founder Jack Layman, who shared that the projected opening is around October 2026.
Layman told What Now Dallas that he and his partner, chef Jose Mendez, had been eyeing Ponder for the last three years before the location finally came together. During that time, he had been searching for the right spot in the area and had previously taken interest in this particular location, though it wasn’t ready at the time.
The area’s rapid residential growth was a key factor behind the decision. “The amount of homes that are being built out there, and there’s not really anything out there at this time,” Layman said.
The concept was born from a long-held ambition shared by Layman and Mendez, with Mendez — who grew up in Mexico City — bringing that culinary identity to a menu centered on from-scratch Tex-Mex offerings. When the opportunity arose, the two partners decided to take the leap and bring what they describe as an upscale Mexico City vibe to North Texas.
That authenticity extends to the menu, which Layman said will mirror the existing Los Compadres experience. When asked about his personal favorite dish, Layman didn’t hesitate: the Steak Relleno.
“I think the authentic flavors are one of the reasons,” he said, explaining why he believes Texas diners will connect with the concept.
The Ponder location would mark continued expansion for Los Compadres, which first launched in Roanoke at 301 South Oak Street. If the new spot performs well, Layman said further growth across Texas, including potential locations in Houston, could follow.
