Owned by Ben and Jodi Polson, Mama Jo’s Biscuits & BBQ is a barbeque restaurant that started its services on February 14. Initially, the husband and wife used to run the business in a food truck format. Four years later, the Polsons fulfilled their dream of starting a brick-and-mortar restaurant.
Expressing her feelings, Jodi said, “We’re very nervous and very excited.” Mama Jo’s Biscuits & BBQ shared the news on its Instagram, where it first offered a “Lil Valentine Biscuit” on February 16. The official launch was then conducted the next day at 3525 E Colfax Ave, Denver, CO 80206, United States.
The Polsons-owned restaurant offers buttermilk fried chicken and a smoked jackfruit sandwich. Other dishes include BBQ-loaded totchos and smoked pulled pork.

This Argentinian restaurant, a casual eatery serving empanadas, Argentinian pastries, coffee, and savory tarts, made its way to Denver in February 2025. It is the fourth Denver-based restaurant of its chef-owner, Lorena Cantarovici. The restaurant opened in the Colfax Avenue region of Denver.
Maria Empanada promises a delicious range of dishes, including Argentinian steak, Ham and cheese, scrambled eggs, ground Angus beef, chimichurri sauce, and braised chicken.
Maria Empanada announced its opening on its Instagram page on Denver’s Colfax Avenue. The post said the Argentinian restaurant would serve alfajores, empanadas, medialunas, espresso bars, and churros on its first day. Additionally, the Cantarovici-owned restaurant presented itself as an ideal family restaurant.

Maíz Denver
Launched initially as a food truck venture in 2021, Maíz entered Denver’s dining scene as a brick-and-mortar restaurant last month. Its owner, Maria Rangel, also launched another food venture, Good Vibes Cafe, during the launch event of Maíz on February 2. Maíz shared details of the same on Instagram.
The new Denver restaurant invites residents to relish Mexican comfort food rich in love, tradition, and flavors. The menu at Rangel’s restaurant includes beans and cheese, Molida & Papa, asada, Chicken Fajita, Carnita, and Guacamole.
