105 West Takes Over Trinity Brewing Co.

105 West Brewing, a Castle Rock-based brewery, is taking over Trinity Brewing Co., a longtime local business located at 1466 Garden of the Gods Rd. Colorado Beer Geek reports ownership and branding will transition, with the spot to be named 105 West @ Garden of the Gods.

Trinity Brewing’s final day of operations is on December 21. The company has been serving the community for 17 years, founded by Jason Yester and then later operated by Matt Dettman. Renovations are scheduled for 2026, but the brewery plans to remain open during construction, it shared on Facebook.

“We’ll keep a few of Trinity’s traditions alive, while adding our own 105 West flair,” 105 West wrote. “We can’t wait to join the Colorado Springs community and share a pint with you soon at 105 West @ Garden of the Gods.”

There will be two dozen 105 West beers on tap, wood-fired pizzas, smoked wings, a new grill menu, Bear’l Cellars wines, draft mead, canned cider, and non-alcoholic beverages available after the handover is complete. The location has a dog-friendly patio space.

105 West Brewing was started in 2015 by Eric Seufert, a veteran and homebrewer turned professional. It began as the Castle Rock Homebrew Store. The brewery operates as a gratuity-free establishment, paying staff a living wage and donating any cash left behind by patrons to local charities.
