Acclaimed Artistic Fine Dining Experience Reopening

The Guest will be returning to once again ‘wow’ patrons.

After more than a year’s hiatus, an imaginative chef-led dining concept that was previously a high-end hotspot is returning. Westword announced the upcoming reopening of The Guest, which will offer an eleven-course tasting menu and one-of-a-kind experience within a speakeasy-style room at The Regular — 1432 Market St.

The reimagined concept is led by husband-and-wife team Chef Brian De Souza and Pastry Chef Sydney De Souza, who have partnered with well-known local hospitality brand Culinary Creative Group.

Reservations open 60 days in advance, and the prix-fixe dinner costs $190 per person, with optional wine pairings and cocktails, its OpenTable page explains. The Guest will be open Thursday through Saturday nights and is an intimate 22-seat space.

Each course intends to tell a story inspired by the chefs’ travels and memories. The debut menu features international flavors (Peruvian heritage, Chinese, Japanese, Italian, French, and African) and includes dishes such as duck leg, scallop and tamarind, and a savory apple treat. Options will alternate throughout the year.

This relaunch marks the third iteration of The Guest since its original pandemic-era pop-up in Boulder. Once they opened The Regular (which was at that point a fine dining restaurant), they operated The Guest inside of it but paused last year while focusing on private events, the Denver Post reports.
