Construction Beginning on Uchi Sister Concept

Uchiko, a spinoff concept of the highly-rated Uchi, is soon to be under construction, according to data online. Work is slated to begin starting at the 299 Fillmore St. property in July, Construction Journal reported. 

Hai Hospitality started both Uchi and Uchiko in Austin, Texas. The restauranteur group chose Colorado as the second state to bring its Japanese seafood concepts to. It has had great success with Uchi since it opened here in RiNo in 2018.

The estimated value of the work to be done is $800,000, records show. Plans include renovations of the existing building both outside and inside, and additions will be made for a kitchen space and outdoor patio. Permits show that the property, which was originally built in the 1930s, was previously Ginny Williams Gallery. 

Uchiko is a Japanese farmhouse fusion concept, with bold flavors from a live-fire grill and an impressive Japanese whiskey menu. The Denver location is expected to seat 175 patrons.
