May 2022 is the planned opening date of a new Detroit-style pizza trailer in Denver. Motor City B’s Pizza owner Brittney Wojtowicz plans to work with HOAs, schools, and other venues to sell her savory pizzas, as well as provide catering options for special events.
Wojtowicz has worked in the restaurant industry and after the recent passing of her cousin, Josh Cook, she decided to open the food trailer. “It was a huge shock to our family. It made me really notice how valuable life is and how short it is. You don’t know how much time you have here, and you want to enjoy it,” Wojtowicz told What Now Denver.
Family is the heart and soul of Motor City B’s Pizza. All of Wojtowicz’s pizza creations on the menu are based on a family member.
Wojtowicz’s family is from Michigan, so she has a pride for Detroit. “That’s what made me lean more towards the Detroit-style pizza is just to keep that family root and do something for my family.”
Each pizza has a deep crust dough, then the meat is added, then cheese, other ingredients, and finally the sauce. “I’m doing a three-line stripe of the sauce on top, so it’s like an upside-down pizza.”
The Broken Oak was her cousin Josh’s favorite. The dough is layered with pepperoni, topped with cheese, banana peppers, and three stripes of sauce before baking. It’s then topped with feta cheese once out of the oven. Other pizzas include The Lou for her mother, the Motor City Stang for her father, and the Little 8 Mile for her two nieces.
The trailer is currently under construction and will include a pizza oven.
