Details Revealed About Coming Hotel’s Coffee and Cocktail Spot

A retro-inspired coffee shop and bar will open on East Colfax as part of the new and improved La Vista Motel, which is currently being completely refurbished. According to liquor licensing data, the property (5500 E Colfax Ave.) will have a lounge called El Piñon open to the public.

Nathan Beal is behind the venture, handling the full-scale transformation with his development company, Saint Bernard Properties. He confirmed to What Now Denver that construction is currently ongoing at the site and it will welcome guests sometime this year.

“We’re really excited to introduce El Piñon as part of La Vista Motel. Our goal is to recapture the spirit of 1960s Colfax—something vibrant, welcoming, and a little unexpected. Whether you’re staying at the motel or just stopping by for a drink or coffee, we hope this becomes a go-to neighborhood spot for South Park Hill, Hale, and Montclair, and helps drive more people to visit this side of Denver,” Beal said.

El Piñon will feature a curated menu of specialty coffee drinks from a local roaster, as well as craft cocktails. It will be designed to echo the vibe of the 1960s, a nod to the mid-century modern heyday of the La Vista. The remodeled hotel will have 23 guest rooms, available for under $200 per night, Central Park Scoop reports.
