This beloved Denver restaurant has been a neighborhood staple for more than 35 years. El Taco de Mexico started in 1995 with Maria Luisa E. Zanabria’s recipes and has since been passed on through the family. When What Now Denver talked with Sasha C E Zanabria, she told us that “35 years takes more than money. We give our heart to what we are doing.”
When we asked Zanabria about customer favorites, she told us that “green chile is a big staple,” as well as “chile relleno burritos and smothered steak tacos.” Sasha Zanabria told us that she has many favorites, depending on what she can be in the mood for. One of her favorites include the tacos al pastor.
The story of El Taco de Mexico goes back 35 years. “My parents and uncle started it up in California,” said Sasha Zanabria, “then my dad came here to Colorado, and was joined by my mom. My mom is from Mexico City and most of the recipes are from there.”
It looks like this beloved restaurant has filed for a permit with the city for renovations. The permit is filed to add to the back of the restaurant and build a structural canopy to the front patio. We love El Taco de Mexico for the way it is, but also look forward to everything that is to come.
