As previously reported by What Now Denver, Ester’s is set to open at Gold’s Marketplace, 2625 Kipling St, Wheat Ridge, CO 80215. It will take over the former Davies Chuck Wagon Diner space.
The location will be the couple’s third, with the other two venues keeping customers happy & satisfied in Denver’s Virginia Village and Oneida Park.
Emily Brown and Paul Sullivan opened Ester’s OG in Virginia Village in 2015. The Oneida Park location came shortly after in 2018. The two craft-beer industry employees conceived a menu that offers an array of hearty plates ranging from standard pizzas to experimental pies like the Bliss [V]: garlic olive oil, mozzarella, aged gouda, herb roasted potatoes, arugula pesto, white truffle oil, chili flakes, and green onion. Their savory & saluted bites can be paired with a long list of crisp beers, round cocktails, and well-considered wines.
Sullivan told What Now Denver that their third location’s spring 2022 opening date came and went due to “a combination of COVID complications and landlord work that needed to be done on the building.” That said, we caught up with the restauranteur to get a few more details about what’s to come and what, if anything, has changed alongside Ester’s anticipated premiere.
WND: When will your third Ester’s location open?
PS: I can’t give you an exact date just because we still have to go through permitting and all that, but it’s looking like October for us.
WND: What else has changed in regards to your guys’ plans for this Ester’s location?
PS: We’re still on track to do the exact things we planned. We have multiple locations here in Denver and the menu will be exactly the same as our current two restaurants. The look, the feel, and obviously the name will also be the same. People seem to enjoy what we’re doing and we’re getting better and better at it.
WND: Do you have plans to continue expanding?
PS: I never say never, and that would be awesome. I think there’s a ton of great opportunity for expansion in these neighborhoods of Denver. With that being said, there are no concrete plans at this moment. We are really excited about this new location and we want to make sure everything [runs smoothly] with that. So, it’s not like, “yes, we’re absolutely doing a fourth one,” but that would definitely be a cool thing.
