Evening Steakhouse Concept in the Works

A new concept backed by the team behind The Chuckwagon is set to bring a new dining experience to Colorado Springs. Located inside the popular Trail’s End Taproom at 2925 W. Colorado Ave, a local partnership group is opening a steakhouse called The Seared Steer.

The venue will specialize in hand-cut steaks and Southern-inspired dishes, using a live-fire cooking method over a wood-fired grill. Key menu highlights will include the Cowboy Cut Ribeye, Chicken Fried Bison Steak, and Baby Back Ribs. All fried dishes will be cooked in 100% beef tallow for optimal flavor.

The team behind the Seared Steer includes Zach and Ciera Romey, who bring their expertise from the successful Robhots Edibles brand, alongside Jared and Deidre Hammond, the owners of The Chuckwagon food truck. The four are also working on Hammond’s Deli, which will open at the same location.

“My wife & I are fortunate to have joined the Hammonds on their next restaurant ventures.  We look forward to teaming up with them and bringing the same quality food & hospitality people have become so familiar with The Chuckwagon over the last 18 months,” Zach declared.

They hope to open the steakhouse sometime in February, Zach told What Now Denver. The restaurant will operate from 4 PM to 10 PM, with a first-come, first-served dining policy, and will also offer delivery, to-go, and sit-down options at Trail’s End Taproom.
