Incoming Agave Blue Acquired by New Owners


Lot One has taken over the company and its upcoming launch efforts.

Agave Blue Cantina, a new business under development in northwest Arvada, has undergone a change in ownership prior to its doors opening. The owners of Lot One, a neighboring eatery, announced that they have acquired the restaurant ahead of its debut at 18168 W. 92nd Ln. Unit C.

Josh Timon, co-founder of Lot One, told What Now Denver his team is “now leading the project. We are currently planning to open in early 2026.” Beyond those details, the publication was not able to connect with them to get any further information.

When What Now Denver reported on the concept initially, it was disclosed that George and Nancy Troche were the owners, and Chef Oscar Padilla, winner of Food Network’s Chopped, was involved as well.

But the chef’s company, Balam Culinary Collective, later said they “ultimately decided to part ways due to differing visions for the concept…and have no affiliation with Agave Blue.” However, it looks like the leadership shift may have changed that; Padilla’s name is currently on Lot One’s website and the Agave Blue social media pages.

Advertised as a steakhouse cantina with contemporary Mexican cuisine, the restaurant will serve bold Mexican flavors, grilled and steak-forward dishes, and creative cocktails. The full-service dining concept will be open for lunch and dinner.
