There is a fast-casual Hawaiian-style poké eatery in the works in Westminster’s Shops at Walnut Creek. Island Fin Poké Company’s first Colorado location will be at 10448 Town Center Drive, Suite 100.

The business announced on social media that it hopes to open the doors to patrons in the middle of July. They are currently in the construction phase at the new space, which is in a busy plaza.

Island Fin Poke Company was founded in 2016 by two coworkers who came up with the idea on a road trip. The concept uses house-made sauces and has fresh,  gluten-free ingredients for diners to choose from in the assembly line.

The Westminster location had originally planned to open at the end of last year, but there were some delays. Those interested in visiting the shop should check the company’s social media pages often to see if a grand opening date has been revealed.
