Colorado Springs is getting a new spot for Korean barbecue and hot pot, with KPOT preparing to open its doors on North Academy Boulevard.
The restaurant is planned for 7695 N. Academy Blvd., in the former On The Border space near Best Buy. KPOT currently lists the Colorado Springs restaurant as coming soon on its website.
The new location will bring KPOT’s combination of Korean barbecue and hot pot to the city, giving diners the option to cook their food at the table.
For the Korean barbecue experience, guests can grill a selection of meats including beef brisket, pork belly and short ribs, along with vegetables and other sides. The hot pot side of the menu allows diners to choose a broth and add ingredients such as thinly sliced meats, seafood, vegetables, tofu and noodles.
KPOT says its menu offers nearly 100 options across its Korean BBQ and hot pot selections, with guests able to customize their meal with different broths, sauces and ingredients.
The Colorado Springs restaurant has also cleared an important step toward opening. The city approved a new Hotel and Restaurant Liquor License for KHP North Academy LLC, doing business as KPOT Korean BBQ & Hot Pot, at 7695 N. Academy Boulevard in August.
The company is now hiring for several positions at the Colorado Springs location, including hosts, bartenders, kitchen staff, servers and restaurant management. The postings describe the restaurant as an all-you-can-eat Korean BBQ and hot pot concept.
An opening date for the Colorado Springs location has not yet been announced.
