Local Favorite, Cochino Taco, Coming Soon to Edgewater

The taqueria concept is moving from its South Broadway location to a new space near Sloan’s Lake.

The S. Broadway location of restauranteur Johnny Ballen’s Cochino Taco is in the process of moving to Edgewater. April 2 was the last day at the SoBo spot, and the business hopes to open at 5495 W. 20th Ave. at the end of April, Ballen told What Now Denver. 

“Cochino Taco Edgewater is slated to receive its final inspections this week in order to get our Certificate of Occupancy.  All fixtures, furniture and equipment are in place,” Ballen said. 

The concept started in 2016 in Englewood, and the Broadway location followed in 2019, as well as an Arvada restaurant in 2020. In addition to the pig-themed taqueria and bar, Ballen was owner of the now-closed The Squeaky Bean, which was a renowned farm-to-table spot downtown. 

At this new Edgewater location, the design will be in typical Cochino style, with handcrafted colorful ceramic tiles, wood, metal, and vinyl graphics. The bar seats 12 and features a vintage Bevador cooler and three frozen drink machines. There will be 11 large TVs throughout the place and a shaded patio with a misting system. 

“We plan on Cochino Edgewater to be a great place to watch games from the NFL, NHL, NBA, and MLB during our Happy Hour from 11 am-6 pm every day,” Ballen added.
