Local Food Truck Launching a Standalone Restaurant

Luchador is opening up a permanent location.

After starting out as a popular food truck last year, Luchador is upgrading to a brick-and-mortar spot. The business will be opening at 2030 E 28th Ave. in the Whittier neighborhood, Westwood reports. 

The concept, which serves Mexican classics with a bit of an Italian twist, is the brainchild of Chef Zuri Resendiz. He is an immigrant from Mexico who has been working in the Denver restaurant scene for 15 years and appears often on the  Food Network.

With this new location, which used to house 3 Sons BBQ and M&D’s Cafe, Luchador will be able to expand its menu. Resendiz teased plates like octopus al pastor and chilango tacos made with Angus ribeye.

In addition to creating the menu, the project is currently in the construction phase. The property is an intimate space that can seat around two dozen guests and will have a tequila and mezcal bar. Upon opening, the business will offer a hybrid model utilizing both table-side servers and counter service.
