Restaurateur Sean Gafner to Open New Concept In Spring 2022

Ready for a taste of the tropics? Longmont residents will find a welcome break from the winter cold next spring with the planned opening of Swaylo’s Tiki Restaurant and Bar.

Swaylo’s plans to take over the former Outback Steakhouse location at 1315 Dry Creek Rd., Longmont, CO 80503. According to Swaylo’s website, the seed was planted for the Tiki-themed restaurant back in 2018.

Chef and restaurateur Sean Gafner wanted to “create a vibrant coastal dining experience” for Longmont residents after traveling with his family to Hawaii, Cozumel, and other tropical locations. Gafner has now found the perfect spot in Southwest Longmont. The new restaurant’s name, Swaylo’s, stems from how locals refer to Southwest Longmont—SWLO.

Gafner is behind three other restaurants: The Roost, Jefes Tacos & Tequila, and Smokin’ Bowls. The restaurants donate part of their profits back to team members as bonuses, to the local community, and to area non-profit organizations.  

Swaylo’s is expected to open sometime in the spring of 2022 and will offer coastal cuisines and beverages to guests.
